About World Bakes
World Bakes recreates baked goods from around the world for a home oven, working from recipes written in the language of the place each one comes from. Breads appear here only when they bake easily in a home oven.
World Bakes is the English edition of a Japanese site, 世界の焼き菓子, and part of World Food Kitchen.
How we write our recipes
- We read at least two recipes written in the bake’s own language — French, Spanish, Portuguese, Swedish, German, Italian and so on — and compare them.
- Every amount is in grams, milliliters or measuring spoons, with US cups, ounces and Fahrenheit alongside. We never write “to taste” or “a pinch”.
- We keep the original proportions, and suggest substitutes for ingredients that can be hard to find.
- Oven temperatures and times are given as ranges, with signs to look for to tell when something is done.
- When we explain why a step works, we only say what we can check in food-science books, papers and the sources we list.
